Low temp glue guns are best for delicate projects with materials that are more likely to be damaged or melted. They are better for materials like styrofoam, craft foam, and candy. They can also be the right choice for thin materials, like ribbon or foil, where the glue is more likely to seep through or transfer heat quickly while you’re working.

High temp glue gun is more durable. Low temp hot glue can actually soften and come apart on hot days (I once watched a piece pop off a wreath on my wall and fall to the ground on a particularly hot day)! High temp hot glue is best for more durable materials and projects like wood, glass, metal, and floral pieces.
